Our oysters grow in the heart of the Wadden Sea – a dynamic landscape that falls dry and floods again twice a day. That rhythm, combined with the nutrient-rich water, defines their character: firm, pure, and full of flavour.
We hand-harvest our wild oysters from tidal oyster beds that fall dry at low tide. This traditional method keeps the beds intact and places minimal strain on the ecosystem. Each oyster is carefully selected, cleaned, and delivered directly to our sales locations without intermediaries.
Wild Wadden Sea oysters are known for their firm flesh. Thanks to the constant alternation between lying dry and being submerged in plankton-rich Wadden Sea water, they develop a compact structure and a full, fresh-creamy bite. Their flavour shifts with the seasons: fresh and mineral in winter, full and robust in spring, and milky-creamy in summer.

Due to the harsh life on the Wadden Sea, these oysters have an exceptionally strong adductor muscle.
They are oysters with a pronounced terroir – shaped by wind, tides, and the rich waters of the Wadden. Thanks to their high protein and mineral content, they are also very healthy. Pure, honest, and straight from the fishers who harvest them.
